Meal Prep Sundays: Creamy Dairy Free Chicken Pasta

Now you guys know I have been a fan of Kevin Curry's FitMenCook Blog/App/Youtube tutorials for a while now. He makes really healthy simple recipes that taste amazing so when I come across a new recipe of his I haven't tried, I make sure to jump on it. This week we prepped Creamy Dairy Free Chicken Pasta. I am a lover of all things pasta so this sounded ahhh mazing.

You can find Kevin's original recipe and video here. Mine differs slightly because I ran out of asparagus so I decided to make this with broccoli instead and I have always been a little heavy handed with seasonings.

What you'll need:

1 lb chicken breast 6 oz. whole grain pasta 1 tbsp evoo 1 1/4 cups low fat coconut milk 3/4 low sodium chicken broth 2 heads broccoli crowns 2 lemons (juice) 3 cloves garlic 1 tbsp oregano 6 tbsp fresh parsley 1 tsp fresh dill Sea salt and black pepper to taste

What to do:

1. Cook whole wheat pasta according to packet directions and set aside

2. Season chicken breast with salt, pepper, and oregano and pan sear with half tbsp of evoo until cooked and set aside

3. With skillet on low heat, add remaining evoo and toss in garlic and chopped broccoli with 1/3 cup water. Let broccoli soften for about 5 mins.

4. Add chicken broth, lemon juice, and coconut milk stir and let simmer.

5. Add pasta reduce heat and stir. Let sauce thicken.

6. Add oregano, dill, and parsley. Stir gently so you don't smoosh up your noodles.

7. Add chicken, stir and VIOLA! Enjoy!

This dish tasted so DELICIOUS I devoured it at work like I hadn't eaten in DAYS. It wasn't sexy but I was too in love to care. I hope you enjoy this recipe as well, and if you haven't already download the fitmencook app or follow his blog for more yummy recipes.
