On Sundays, we meal prep....


Sundays used to be one of the hardest days for my family. Not because of any other reason but that it was the signal of the new week starting. More work, less fun, more things to check off of our to do lists. After I started focusing on our health as a family, I realized one of the biggest things that helped us stay on track was having healthy full meals pre made and ready to grab and go during the week.

Since we refuse to eat the same meal daily in fear of getting bored, I prep about 2 or 3 options so I can mix it up every day. 2 entrees with 2 or 3 options for sides, prepped side salads, and fruit. Nothing seems tasteless or repetitive. Who says clean eating needs to be boring???

This week I was running low on time so instead of making something that would take actual effort lol, I did a quick turkey mash with squash, zucchini, (pictured above) and some garlic baked chicken breast. Both have an option of either a side of roasted sweet potatoes or jalapeño black beans. I'm getting hungry just thinking about it! :D

This week for dinner I am going to make sure I try some new recipes that will be different from my normal go-to's. Robert mentioned trying a Ratatouille recipe we found on pinterest and I have to admit I thought that was just a movie lol. Call me uncultured, but oh well.
